Quinoa mit getrockneten Tomaten und Radieschen

Zutaten für 4 Personen: 300g Quinoa | 6 TL Getrocknete Kirschtomaten, weich | 6 TL Radieschen, in Scheiben geschnitten | 2 TL Zitronenzesten, geraspelt | 2 TL Mandeln, geröstet, Schale entfernt | Salz und schwarzer Pfeffer


Wasser in einem Topf mit etwas Salz zum Kochen bringen. Quinoa 15 Minuten köcheln lassen. In der Zwischenzeit die Toppings vorbereiten. Die Mandelschale lässt sich leicht entfernen, wenn man die Mandeln über Nacht oder zumindest 30 Minuten in Wasser einweicht. In einer Pfanne, aber ohne Fett, rösten. Die Mandeln sollten eine schöne Farbe bekommen.

Quinoa abseihen und je nach Geschmack mit Salz und Pfeffer würzen. In einer Schüssel anrichten.

Sussitz Tipp: Wir verwenden die Pomodori Sunkissed von De Carlo. Diese sind sehr weich, schön süß und haben ein verführerisch gutes Öl mit dabei. Letzteres gibt dem Quinoa viel Würze.
