San Marzano ist eine vom Aussterben bedrohte Tomatensorte aus Kampanien, vom Fuße des Vesuv. Die San Marzano Tomate ist für die industrielle Verarbeitung nicht geeignet, denn sie muss aufwändig per Hand geerntet werden. Schonendes Einkochen im "Bagno Maria" garantiert ein einzigartiges Aroma.
San Marzano heißt das Zauberwort
Bei der Verwendung Dosentomaten sollte man immer darauf achten, dass es sich um ganze festfleischige Tomaten in wenig eigenem Saft handelt, damit die Tomaten beim Kochen ihr volles Aroma entwickeln können. Meiner Ansicht nach die besten Tomaten aus der Dose sind dieder Sorte San Marzano
Sonnengereift und saisongerecht in Süditalien geerntet entwickeln die Früchte einen angenehm süßlichen Geschmack und sind, genauso wie die roten Tomaten, in der Küche vielfältig einsetzbar. Besonders reich an Betakarotin. Ideal zu delikaten Nudelsaucen oder zu leichten Fisch- und Fleischgerichten. Ganz, geschält und im eigenen Saft.
